Honey Lemon Vinaigrette

1 Cup Lemon Juice

1 Cup Avocado oil

1 Cup Honey

1 tsp Madras Curry Powder

In a large bowl, combine Honey, Curry Powder and Lemon Juice. While stirring, slowly drizzle in Olive oil until the dressing begins to thicken. Gradually increase the flow of the Avocado Oil until the dressing is well combined.

 

Shrimp Salad

½ lb Peeled Shrimp

½ Cup Diced Red Onion

½ Cup Green Bell Pepper

¼ Cup Diced Green Apple

2 Cups Spring Mix

1 Piece Pocket Pita

In a large bowl, combine shrimp, red onion, bell pepper and green apple. Pour the salad dressing over the top and toss until well combined. Add the spring mix and gently toss until salad dressing coats the lettuce.

Open pocket in the side of whole wheat pita and stuff with composed salad.
