2 (10ounce) packages frozen chopped spinach
4 large eggs
1 cup minced onion
¾ cup (3 ounces) freshly grated Parmesan cheese
¾ cup (1 ½ sticks) melted margarine
½ teaspoon salt
½ teaspoon dried thyme leaves
¼ teaspoon pepper
¼ teaspoon nutmeg2 ½ cups herb seasoned stuffing mix
Cook the spinach according to the package directions; drain and squeeze dry. Beat the eggs in a medium bowl. Add the spinach, onion, cheese, margarine, salt, thyme, pepper and nutmeg, and mix well. Stir in the stuffing mix. Let stand for 20 minutes. Shape the mixture into balls, using about 1 rounded teaspoon of the mixture for each ball. Arrange on an ungreased baking sheet. Bake at 350 degrees for 20 minutes.
