Oven Roasted Goose Breast
Pierce goose breast with fork. Rub soy sauce, salt, pepper, and garlic powder onto breast. Let marinade for 30 minutes. Heat saute pan to medium high heat. Add olive oil, bring to a smoke. Sear goose 2 minutes per side until crust forms. Transfer pan to a preheated 400 oven and roast goose for 15-20 minutes unitl medium rare. Remove from oven and rest.
King Oyster Mushroom and Squash
Slice mushrooms into quarters. Rinse. Saute over medium heat with 2 tablespoons olive oil. Cook 5 to 7 minutes until mushrooms are tender. Reserve. Toss sliced squash with onion, salt, pepper, olive oil. Bake at 400. 15-20 minutes. If squash hasn't developed color, turn oven to broil and broil on high for 2 minutes watching squash closely.
Hollandaise Sauce/Poached Egg
Warm 8 oz butter over low heat. 20 minutes. Remove solids that float to top. You will have clarified butter remaining. Keep butter warm. In a bowl beat 1-2 egg yolks. Add white wine or mustard for flavor. Whisk until frothy or ribbions begin to form. Drizzle clarified butter into egg yolks whipping continuously. An emulsification will start to develop. When sauce is thiick enough adjust seasoning with lemon juice, cayenne pepper, salt, pepper.
Serve Benedict on top of toasted english muffin or bagel.
