This is a simple stir fry that is highly modifiable depending upon your tastes. In addition to fresh basil, fresh oregano, rosemary, and/or thyme can be used.
1 lb. zucchini (about 3 medium)
2 Tbsps. butter
1 Tbsp. olive oil
1 cup thinly sliced red onion
1 cup sliced bell peppers
1 clove garlic, minced
1 1/2 cups peeled, seeded, and chopped plum tomatoes
1 Tbsp. fresh basil, chopped coarsely
1/2 tsp. fresh oregano chopped coarsely
1/4 cup parmesan cheese
Salt, to taste
Ground black pepper, to taste
Julienne zucchini and combine in medium bowl with onion, peppers, and garlic. Sauté mixture in butter and olive oil over high heat for about 3 minutes. Add tomatoes, herbs, salt, and pepper and continue cooking about 5 minutes (if mixture is watery, continue cooking over high heat to reduce the pan juices to desired consistency). Remove from heat and stir in the parmesan cheese. Serve hot or chilled -- great over fish, grilled chicken, or as a stand-alone side; extremely tasty and nutritious!
