KC Masterpiece Spicy Mango Chocolate Cupcakes


3 cups all-purpose flour

2 cups sugar

3/4 cup cocoa

2 tsps. baking soda

1 tsp. salt

3 lg. eggs

1 cup KC Masterpiece Spicy Mango Marinade

2 cups skim milk

1/2 cup vegetable oil

Juice of one lime (zest first for Lime Cream Cheese Icing)

Lime Cream Cheese Icing:

4 cups confectioners' sugar

1/2 cup unsalted butter, room temperature

8 oz. cream cheese, room temperature

2 tsps. vanilla extract

1 tsp. lime extract

Zest of one lime (about 1 Tbsp.)

Cupcakes: Line four 12-cup cupcake tins with liners and set aside. Preheat oven to 350 degrees.

In a large bowl, mix flour, sugar, cocoa, baking soda and salt together. Add remaining ingredients to flour mixture and mix until smooth. Pour batter into lined tins about 3/4 full.

Bake for 18-20 minutes. They should spring back when pressed lightly in center. Cool completely.

Dust with powdered sugar or ice with Lime Cream Cheese Icing. Makes 36-42 cupcakes.

Icing: Put all ingredients in a large bowl and slowly bring mixer to medium speed. Mix until combined. Scrape down sides of bowl and beat at medium speed for 5-7 minutes until light and fluffy. Ice cakes and enjoy.
