China's bagels

In a village in rural northwestern China, a bakery makes bagels, called girda nan or nang, by placing shaped dough along the sides of a very hot oven to bake. The finished bagels are removed with a metal tool to a hand-woven basket and delivered to street corner stands. James Michael Dorsey
