Tasty Tuesday: Lemon Rice

Lemon Rice

Lemon Dressing:
1/3 cup extra virgin olive oil
1/4 cup fresh lemon juice
1/4 cup chopped flat leaf parsley
1 Tablespoon chopped fresh mint
1 Tablespoon chopped fresh oregano
1 garlic clove, minced

1 cup brown rice
2 cups chick-peas, rinsed
6 ounces crumbled feta cheese
1/2 cup finely chopped red onion
1/4 cup pitted kalamata olives, chopped
1/8 teaspoon salt
1/8 teaspoon pepper 

For the dressing:  Whisk the olive oil, lemon juice, parsley, mint, oregano and garlic together in a small bowl.

For the rice:  Cook the rice using the package directions.  Remove from heat to cool.  Combine the rice, chick-peas, cheese, onion, olives, sale and pepper in a large bowl and mix well.  Add the dressing and toss gently to coat.
