Several shop owners encourage people to make their own creations rather than just choose a specialty classic sundae.

Erin Cusack, visiting from Boston and stopping for ice cream at Shady Glen, 840 Middle Turnpike, in Manchester, in Manchester, has her own concoction: "My favorite ice cream is cookie dough. Then no whipped cream, but replaced with marshmallow syrup. And no hot fudge but replaced with strawberry topping. It actually blends well."

And she always has to have a cherry. No pretty please about it.

As for the eternal debate: nuts or no nuts?

"No nuts. I'm firm on that. It could ruin a sundae!"
