Pumpkin, Squash, Zucchini

Hiding good-for-them foods may seem like cheating, but, oh, well. Pumpkin muffins provide vitamins A and C, as well as fiber and calcium. Or use canned squash, those overripe bananas that always seem to be on hand, or that zucchini from your garden to make muffins and breads they won't be able to resist. Add nuts, raisins or their favorite fruit for an added treat, and substitute applesauce for some of the fat.
