Executive Chef Frank Imbarlina's miso-orange-glazed roasted tofu with sauteed red quinoa, chopped pecans, dates and grilled asparagus is a visual treat. The fluffy texture of the tofu is contrasted by the nuttiness of the pecans and quinoa, while the asparagus adds elemental lines to complete the structure.
