When you think of making s'mores, a roasting marshmallow held over a warm campfire probably comes to mind. But do you also imagine yourself making them while sitting knee deep in snow and ice? Probably not. But even though we're heading into winter, restaurants, caterers and bars in Connecticut have incorporated s'mores into their menus so we can still enjoy these treats while inside.
Jeff Borofsky, owner of Fairfield County-based Skinny Pines Brick Oven Caterer, is known for bringing artisanal pizza to private events "all over the place." But what people might not know is that he also prepares s'mores for his customers. "The whole idea came naturally to me since we already had a wood-fire oven to begin with. And who doesn't like s'mores?" he adds. "In fact, I made them for the last two parties I hosted. It's fun and exciting and people love the idea." Borofsky also gets all foodie-DIY by making some of the ingredients himself. "We prepare our own marshmallows without corn syrup, which gives our s'mores a pure flavor. I find that the people really enjoy the quality of the dessert that way." What he doesn't make himself is bought locally. His flour comes from New York and the Taza 60 percent chocolate is stone ground in Massachusetts.
At the Black Bear Saloon in New Haven, customers have a chance to create their own s'mores with the Black Bear Cub Campfire on their dessert menu. "We bring everything to the table for the customer including our grate and all the expected condiments: graham crackers, Hershey bars and marshmallows with toothpicks," says waiter Manny Fernandez. They take the Sterno, a portable flame, and place it inside a torch that hides it. When turned on, the end result mimics a little campfire that can roast marshmallows, minus the outdoors. "It's definitely popular when it gets colder outside," he says. "It's one of the best desserts we have."
