The Regal Beagle, a casual cocktail bar in Canton nodding to the sitcom “Three’s Company,” will open in early April in the former Jack’s Bistro space.
The Regal Beagle’s bar and front of the house will be run by managing partner Ryan Sparks, while Ted Stelzenmuller will handle the food, Sparks said. Stelzenmuller was the owner and chef of Jack’s until he closed it last month to open Blair’s on Hudson, another Canton restaurant.
“It’s small. It’s manageable,” said Sparks, the former beverage director at Bookmakers Cocktail Club in Federal Hill. “It’s exactly what I’ve always wanted.”
In January, Stelzenmuller described the Regal Beagle as a temporary concept as he tried to find a buyer for the restaurant, but that’s no longer the case, Sparks said. The duo plans to try to make this concept work permanently, he said, as Stelzenmuller continues to operate Blair’s.
Stelzenmuller could not immediately be reached for comment Wednesday.
The Regal Beagle was the name of the fictional bar on “Three’s Company,” and the TV show’s influence extends beyond the name. Sparks said his cocktail menu will be inspired by the late ’70s and ’80s (the era when “Three’s Company” aired). He’ll create updated versions of drinks popular from the time, like an amaretto sour, but with house-made ingredients.
The new bar is a return of sorts for Sparks — he bartended at Jack’s from 2012 to 2014, and he’s looking forward to getting back.
“I’m really excited to touch base with all my old regulars that would not go to Fed Hill,” Sparks said with a laugh.
The Regal Beagle (3123 Elliott St.) will be open 4 p.m.-1 a.m. Tuesday-Saturday, and closed Sunday-Monday, Sparks said.
