3. The emergence of tapas and small plates

<a href="http://findlocal.baltimoresun.com/station-north/restaurants/spanish/tapas-teatro-baltimore-restaurant">Tapas Teatro</a> opened in 2001, followed by <a href="http://findlocal.baltimoresun.com/mount-vernon/restaurants/martini-bar/red-maple-baltimore-bar">Red Maple</a> in 2002, <a href="http://findlocal.baltimoresun.com/columbia-area/restaurants/american/iron-bridge-wine-company-columbia-restaurant">Iron Bridge Wine Company</a> and <a href="http://findlocal.baltimoresun.com/fells-point/restaurants/mediterranean/kalis-court-mezze-baltimore-restaurant">Mezze</a> in 2003, and <a href="http://findlocal.baltimoresun.com/harbor-east/restaurants/mediterranean/pazo-baltimore-restaurant">Pazo</a> in 2005.<br>

These days many of our restaurants offer tapas even if they aren't small plates places. And tapas restaurants continue to open. Witness <a href="http://www.baltimoresun.com/entertainment/dining/bal-ae.restrev27dec27,0,7735920.story">Sam's Kid</a>, <a href="http://findlocal.baltimoresun.com/harbor-east/restaurants/nuevo-latino/talara-baltimore-restaurant">Talara</a> and Tapas Adela.
