Fork & Wrench has a new executive chef

Fork & Wrench, the eclectic restaurant in Canton, has a new face at the head of its kitchen.

Corey Laub was named executive chef of the restaurant at 2322 Boston St.

Laub, a Columbia native, most recently worked at Novo, a gastropub in Chicago that closed this month. He previously spent time working at restaurants in the Baltimore-Washington area, including Aida Bistro & Wine Bar, Wine Market, 701 Restaurant, Firefly, Beuchert’s Saloon and Lincoln Restaurant.

Laub, 26, replaces Ben Sawyer, who left Fork & Wrench to pursue a position in D.C.

Under Laub’s leadership, Fork & Wrench’s menu will change monthly and revolve around local, seasonal ingredients. New additions to the menu include offerings such as cucumber tequila gazpacho; the Fork & Wrench Burger, topped with bacon, smoked gouda, sabayon and pickled shallots; seared scallops with cashew puree, charred green onion, sea beans and raisin agrodolce; and corn risotto with corn puree, scallions, roasted tomato, queso fresco and chile oil.

Owners Andy Gruver and Jason Sanchez opened Fork & Wrench in 2012. More recently, they debuted Modern Cook Shop, a restaurant and market in the Union Wharf building in Fells Point.
