French bistro Chez Hugo to open in downtown Baltimore in late February

Chez Hugo, the new French bistro by chef Steve Monnier, will begin serving customers Feb. 24.*

The restaurant at 206 E. Redwood St. was originally slated to open Feb. 14. The bistro will offer limited reservations for its Feb. 24 opening, and will be fully up and running by Feb. 26.

Chez Hugo will seat 83 guests between its dining room, tasting room and bar. The 4,000-square-foot eatery will focus on traditional French fare, as well as French wines, cocktails, and Maryland beers and ciders.

“People can expect a casual French bistro atmosphere, where people feel like they are in France and enjoy la joie de vivre with great company and a pleasant meal with no pretensions,” Monnier said in a statement. “My cuisine will be as simple as possible with the utmost respect of the products from the sourcing and the livestock to the plate.”

Monnier previously owned and operated Aromes, a small French restaurant in Hampden. He closed Aromes in October. Foraged, an eatery by chef Chris Amendola, opened in its place in December.

*Update, Feb. 5, 2018: Chez Hugo’s opening was pushed back to Feb. 24. It was previously slated to open Feb. 14.
