Amy and Spike Gjerde have announced a staggered spring opening for Parts & Labor, the full-service retail butcher shop and restaurant coming to Remington.

The butcher shop will open first, sometime in late March, with the 84-seat restaurant scheduled for an opening in April. This is the fourth restaurant for the Gjerdes, following Artifact Coffee and Shoo-Fly and their flagship, Woodberry Kitchen, all located in Baltimore.

Housed in a former car-repair and tire shop, Parts & Labor will be the new home for the intensive, whole-animal butchery program that has long been housed at Woodberry Kitchen. Supervised by Spike Gjerde and head butcher George Marsh, the butchery program supplies all of the Gjerdes' restaurants. 

The Remington butcher shop will showcase Marsh's expertise in seam butchery, which is a traditional French butchery method.

The restaurant will feature cooked items cooked solely on the restaurant’s stone hearth, which was designed by Spike Gjerde and built by local mason Justin Tagg from reclaimed Baltimore city cobblestones.
