This easy-to-make bar cookie has a rich butter cookie crust topped with chocolate and nuts with just a slight hint of mint. Chocolate lovers will really enjoy this one.
1 cup butter, softened
1 egg yolk
1 cup brown sugar
2 cups of flour
1 teaspoon vanilla
1/4 teaspoon peppermint extract
1 12-ounce package semi-sweet chocolate chips
1/2 cup finely chopped pecans
Cream softened butter, brown sugar and the egg yolk. Use mixer and beat until smooth.
Add flour and vanilla to mixture. Beat again until smooth.
Pat mixture into a 15-inch by 10-inch sided greased cookie sheet.
In a small saucepan, melt the chocolate chips and add peppermint extract. Pour over the cookie dough and spread with a knife to cover the entire surface. Sprinkle pecans evenly over the chocolate layer.
Bake at 375 degrees for 15 to 20 minutes. Score into squares while still warm.
Makes 24 squares.
