Almond/Coconut Dark Chocolate Treats

Ginny Bell of Arnold and her grandson, Tucker, were inspired to develop this no-bake recipe after enjoying the flavors of Almond Joy candy bars at <a class="taxInlineTagLink" id="EVFES000167" title="Halloween" href="/topic/arts-culture/halloween-EVFES000167.topic">Halloween</a>. With its mixture of almonds, dark chocolate, coconut and flaxseed meal, it almost passes as health food, too. But it doesn't taste like health food.<P><br>

Makes: 25 treats<P><br>
<br>
12 ounces chocolate chips (such as <a class="taxInlineTagLink" id="ORCRP007253" title="The Hershey Co." href="/topic/economy-business-finance/consumer-goods-industries/food-industry/the-hershey-co.-ORCRP007253.topic">Hershey's</a> Special Dark)<P><br>
<br>
1 cup sliced honey roasted almonds (such as Trader Joe's)<P><br>
<br>
1 cup sweetened coconut flakes<P><br>
<br>
1/2 cup whole ground flaxseed meal<P><br>
<br>
1/4 teaspoon almond extract<P><br>
<br>
Melt chocolate chips in microwave on high power for 2 1/2 minutes. When fully melted, quickly stir in remaining ingredients. Drop by tablespoonfuls onto baking sheet lined with wax paper. Chill in refrigerator for one hour or freeze for later use.<P>

1 cup sliced honey roasted almonds (such as Trader Joe's)

1 cup sweetened coconut flakes

1/4 teaspoon almond extract
