Makes 1 bottle 1 tablespoon cardamom 1 teaspoon nutmeg 2 teaspoons caraway seed 10 whole cloves 10 whole allspice berries 4 cinnamon sticks 4 pieces crystallized ginger 2 teaspoons whole peppercorns 1 whole orange zest 1 whole lemon zest 4 cups water 1 tablespoon vanilla extract Medium bottle of honey 1 quart grain alcohol Combine all spice ingredients and zest in a pot, add water. Bring to a boil then simmer until liquid has reduced by half. Strain the liquid and set aside. Pour honey into a pot, and bring to a boil. Stir in the strained spice liquid and add vanilla extract. Remove from heat and carefully stir in the grain alcohol. Allow it to steep overnight and bottle the next day. Do not consume for at least three weeks -- the longer it ages, the better.
