Hibernation, with bread

<b>Chris Rolfe, forward / winger, Chicago Fire:</b>  What's your favorite way to spend a winter evening? "I tend to hibernate at home and bake. My favorite in the winter is zucchini bread. I use my mom's recipe passed down through the family ? I even have the old recipe card my mom used to use. I buy the zucchini in the summer and freeze it."<br><br>
BAKE THIS: Chris Rolfe's zucchini bread<br><br>
3 eggs, 2 cups sugar, 1 cup oil. Mix well.  Add: 2 cups grated zucchini, 3 teaspoons vanilla, 3 cups flour, 1 teaspoon salt, 1 teaspoon baking soda, 3 teaspoons cinnamon, 1/2 teaspoon baking powder. Flour and oil 2 loaf pans. Bake at 325 degrees for 1 hour or tooth pick comes out clean  Makes: 2 loaves
