Frederik Jensen, creative chef, Roti Mediterranean Grill

Frederik Jensen has been named creative chef for Roti Mediterranean Grill, which operates 16 restaurants, including six in Chicago where it is headquartered. 

The Danish-born Jensen, 25, has trained in kitchens around the world, most notably Tamarin in London, Premisse in Copenhagen and Jade on the 36th in Shanghai. 

After graduating from Copenhagen Hospitality College, Jensen travelled extensively and chronicled his Asian culinary journey in his book" Wabi Sabi."  Frederik also authored "The Royal Smushi" cookbook for Denmark's Royal Cafe, which won the 2012 Best Danish Cookbook Award at the Gourmand International's Paris Cookbook Fair.
