Months ago, I mentioned that Molto Pazzo opened in the former Olio Italian restaurant space at 553 Main St., in downtown Bethlehem.
The details were pretty slim at the time, so here's some more:
Owners Ralph and Staci Caiazzo describe the eatery as a classic Italian restaurant featuring fare like baked penne, lasagna, lobster ravioli, chicken saltimbocca, veal peperonata, in addition to soup, salads, and sandwiches.
The eatery is BYOB. Owners are also in the process of obtaining a winemakers license, which will allow them to make and serve pinot grigio and merlot. They hope to have the license, which was the same one Olio used to make its wine, later this month.
Staci Caiazzo said the family has shown them how to make the vino.
The Caiazzos also did some renovations to the former Olio space, revamping the kitchen to sustain a larger menu selection and adding new tables and outdoor seating.
Olio closed last year. The eatery replaced the former Bonte Wafflerie and Cafe in March 2010.
